Description
A distinction is made between fruit bananas and plantains. The banana fruit is responsible for the topic of dried fruit. Plantains are processed and consumed at origin.
Bananas are very well known, especially as banana chips. These are deep-fried to a crisp and are a suitable snack as well as a suitable ingredient in muesli bars. There are also bananas that are dried without any other additives. We offer these as well as natural bananas with up to 20% residual moisture, which are separated with banana flour. This product was developed for processing and refinement use (e.g. chocolate-coating). The pieces are softer and have an intense taste without using added flavourings. We also offer banana flour and banana paste. These are semi-finished products that are used in baking mixes or muesli bars. The paste is easy to process, and the banana flour can be precisely dosed and added to other ingredients.
Ripened bananas are sorted, cleaned, hand peeled and dried down to about 18% moisture. This is done on trays in drying tunnels that are 70-80°C.
