Description
The firm, not yet fully ripe pears are halved by hand, de-stemmed, pitted, if necessary and dried on wooden racks in the sun.
If necessary, sulphur is added to the product.
For later drying, the dried pears are temporarily stored in CO2 refrigerated warehouses.
